Still truckin' :)

It's been a bit since I posted any progress. It had been a rough past couple of weeks, but I just picked myself back up and got back on track.

Had our weekly Weight Watchers meeting yesterday. Slowly but surely it's coming off, and I know that is the best way. But I'm excited that as of yesterday, I reached my second short term goal: 10 lbs. gone baby!! Go me, go me, go me!

Next goal: the 15 lb. mark......stay tuned!

Creamy Philly Pesto Chicken

Made this for dinner tonight and O...M....GOSH! It is soooooo yummy and only 5 WW points!

(It doesn't specify what oil, but I used olive oil)

Ingredients
1 teaspoon oil
4 small boneless skinless chicken breasts
1/4 cup PHILADELPHIA Cream Cheese Spread
1/3 cup 25%-less-sodium chicken broth
2 tablespoons pesto

Directions
1. Heat oil in large nonstick skillet on medium heat. Add chicken; cook 6 to 8 minutes on each side or until done (170 degrees F). Transfer to plate; cover to keep warm.

2. Add cream cheese spread to skillet; cook on medium heat 5 minutes or until melted, stirring constantly. Whisk in broth and pesto; cook and stir 2 to 3 minutes or until sauce is thickened and well blended. Pour over chicken.

Chinese Spice Rubbed Pork with Stir Fry Veggies

Personally, next time I make this, I'm gonna use less of the Chinese 5 spice.  It reminds me if black licorice...and add more veggies.

Ingredients:
1 tsp. Chinese 5 spice powder
1 tsp. ground coriander
1 tsp. chili powder
Zest and juice from 1/2 a lemon
18 oz. pork tenderloin,  trimmed of all fat
4 1/2 oz. egg noodles
Low fat cooking spray
Red and green peppers, de-seeded and chopped
1 tsp. fresh root ginger, peeled and grated
2 T. low sodium soy sauce

Directions:
1. Sprinkle the Chinese 5 spice powder, coriander, chili powder, and lemon zest onto a plate. Roll the pork in this mixture and slice into strips.

2. Place the noodles in a large bowl and cover with boiling water. Soak for 4 to 6 minutes, or according to the packet directions. Drain thoroughly.

3. Heat a wok or large frying pan and spray with cooking spray. Cook the pork slices for 5 to 6 minutes, stirring occasionally until cooked. Remove from the pan and keep warm.

4. Add all the vegetables and ginger to the wok or frying pan and stir fry for 3 to 4 minutes. Add the noodles with the lemon juice and soy sauce, reheat for few moments, then mix in the pork.

Still truckin' along!

Haven't posted anything in a while, but I'm  still going! Had the weekly weigh in yesterday, down another 2.4 lbs. Go me, go me! So that makes a grand total so far of 8.8 total lost. Not as much as I was hoping for at this point, but at least it's heading in the right direction! Time to step it up a notch!

Splurging.....

I know it's not the best of meals, but it's oh so yummy.  We are splurging today at La Frontera while waiting for them across the street to finishing putting new tires on my car. But, I did good. While before I would finish off the entire plate (I know, I know), I'm actually leaving with more than half my food.  But I do know that this will mean double time on the Just Dance later  :)

Slow and Steady Wins the Race!

Today is Friday,  you know what that means: Weight Watchers Weekly weigh-in!

Did I do good, did I do bad...did I do ok?  Well, I'm happy to report another 1.8lbs. GONE! :) For a grand total of 5.8lbs. lost! Am I happy? You bet I am! Even tho it's taken 3 weeks for the 5 lbs. to be lost, I'm okay with that. I know it's not going to come off quickly, it's a work in progress. After all, slow and steady truly does win the race.
