Personally, next time I make this, I'm gonna use less of the Chinese 5 spice. It reminds me if black licorice...and add more veggies.
Ingredients:
1 tsp. Chinese 5 spice powder
1 tsp. ground coriander
1 tsp. chili powder
Zest and juice from 1/2 a lemon
18 oz. pork tenderloin, trimmed of all fat
4 1/2 oz. egg noodles
Low fat cooking spray
Red and green peppers, de-seeded and chopped
1 tsp. fresh root ginger, peeled and grated
2 T. low sodium soy sauce
Directions:
1. Sprinkle the Chinese 5 spice powder, coriander, chili powder, and lemon zest onto a plate. Roll the pork in this mixture and slice into strips.
2. Place the noodles in a large bowl and cover with boiling water. Soak for 4 to 6 minutes, or according to the packet directions. Drain thoroughly.
3. Heat a wok or large frying pan and spray with cooking spray. Cook the pork slices for 5 to 6 minutes, stirring occasionally until cooked. Remove from the pan and keep warm.
4. Add all the vegetables and ginger to the wok or frying pan and stir fry for 3 to 4 minutes. Add the noodles with the lemon juice and soy sauce, reheat for few moments, then mix in the pork.
